Caponata, made with aubergine, green olives, capers, onions, garlic and tomato with sugar and white wine vinegar, is a famous Sicilian condiment with every area of Sicily adding its own twist to the dish. Inspector Montalbano once said that, “Caponata in Sicily is like the accent, it changes from town to town”.
